8:00 AM – Breakfast at Circle W Market
Start your day with a hearty breakfast at Circle W Market (2588 County Rte 23B, South Cairo). Known for fresh, local eats, it’s a cozy spot to grab a breakfast sandwich, coffee, or their famous baked goods. Opens at 8:30AM 5 days a week, it’s perfect for fueling up on your way to Kaaterskill fall.

9:00 AM – Hike to Kaaterskill Falls
Head to the Kaaterskill Falls trailhead at Laurel House Road (off County Rte 18, Haines Falls, NY). Park here. The hike is a 1.4-mile round trip to the base of the falls (260 feet total drop, NY’s tallest two-tier waterfall). Start with the easy 0.3-mile gravel path to the upper viewing platform for a stunning top-down view, then take the steeper 0.4-mile trail down to the base if you’re up for it (rocky, with stone steps—wear sturdy shoes). Plan for 2-3 hours total if you are doing the longer hike, including photo stops and soaking in the scenery!
Afternoon – Subversive Malting + Brewing

12:30 PM – Lunch & Beers at Subversive
Drive to Subversive Malting + Brewing (96 W Bridge St, Catskill, NY—~20 minutes from the falls, open at 12pm on Saturday & Sunday). This farmhouse brewery is a chill spot with a big outdoor area, fire pits, taps of seasonal ales, IPAs, and stouts. They have a great food menu with vegan options, a delicious smash burger and smaller bites as well.

6:00 PM – Dinner at Stewart House 1888 Tavern
Head to Stewart House 1888 Tavern (2 N Water St, Athens, NY). This historic spot on the Hudson River offers a tavern menu with hearty options like burgers, fish, or seasonal specials, all with a cozy, old-school feel. Reservations are smart for weekends. It’s right by the water, so you’ll get a taste of the Hudson river vibes.
7:30 PM – Walk at Athens Riverfront Park
After dinner, stroll across the street to the Athens Riverfront Park. This small park has paved paths along the Hudson, perfect for a post-meal leg stretch. Catch the sunset if timing’s right and enjoy views of the Rip Van Winkle Bridge.
